    According to the Food and Agriculture Organization of the United Nations (FAO), probiotics are “live microorganisms administered in adequate amounts which confer a beneficial health effect on the host”. Most probiotics are bacteria, which are small, single-celled organisms and are categorized by the genus and species names. For example, for the probiotic bacterium, Lactobacillus acidophilus , the genus is Lactobacillus and the species is acidophilus.

    One yeast, Saccharomyces boulardii, belonging to the strain Saccharomyces cerevisiae has also been evaluated as a probiotic. The name “boulardii”, however, is not a recognized scientific species of Saccharomyces. Most probiotic products contain bacteria from the genera Lactobacillus or Bifidobacterium, although other genera like Escherichia, Enterococcus, Bacillus, Propionibacterium and Saccharomyces (a yeast) have been developed and marketed as probiotics.
